We will be learning how to create three 3 different soups -Pasta e Fagioli, meaning “pasta and beans”, Potato cream soup and crostini – another winning hearty dish and last but not least the traditional Vegetable minestrone.
Pasta e fagioli, meaning “pasta and beans”, is a traditional Italian soup. It is often called pasta fasul in the United States, derived from its Neapolitan name, pasta e fasule. Like many other Italian favorites, including pizza and polenta, it started as a peasant dish, being composed of inexpensive ingredients.
Potato cream soup and crostini – another winning hearty dish. Using kitchen staples there is nothing glitzy about this dish – taste and texture win the day.
Vegetable minestrone . A mixture of all the vegetables you can get your hands on.A bountiful dish that is eaten every day for lunch by so many Southern Italians. It can be made with seasonal vegetables from the garden and will warm any heart.
