Join us this week for our special frying edition. Cauliflower in Tempura , Potatoes Crochette with mozzarella, Panelle – Chickpea paste fried and Primo sale (fresh Pecorino ) fried with 3 sauces.

Thursday 28th January at 18.00 hrs Rome time ( 17.00 hrs London, 09.00 hrs California, 12.00 hrs in New York and Toronto, 10.00hrs in Calgary)
We are dedicating this class to frying which reflects our Sicilian street food … we are going to look at the typical fried antipasti and sauces (one will be a sweet and sour sauce and a homemade tartar sauce).
We will be doing:-
Pane e pannele a small fritter containing chickpea flour and might sound mundane but is , in fact, delicious!
It is usually served in typical Sicilian bread covered with sesame seeds. Bread stuffed with panelle can be easily purchased in fry shops (including street vendors called panellari) throughout Palermo.
we will be frying the following :
Cavolfiore in pastella – Cauliflower in Tempura
Potatoes Crochette with mozzarella
Panelle – Chickpea paste fried
Primo sale (fresh Pecorino ) fried.
3 sauces :
Balsamic Vinegar Sauce
Tartar sauce Sauce
Spicy sauce

Crispelle -These savoury Italian fried dough balls called Crispelle are a classic appetizer that we offer with aperitif especially on Festive days. Inside the fried dough there are small pieces of anchovy making it crunchy on the outside and soft inside finishing with a salty bite of anchovy or ricotta.
Sicilian Potato Croquette - simple and quick to make…just as quick as they will disappear from your table once served!
Fried sage leaves ... a delicious finger food for parties - who knew just how delicious a simple herb leaf could be.
