Feedback on VB Zoom Classes from clients in 2020/2021

From the comfort of our sofa here in the UK, being able to learn to cook some of Sicily’s most historic and iconic dishes via Zoom has been superb. We learnt the basics from chef Elvira and Louisa including making home made pasatta, simple roasted peppers and egg-plant salads to more complex dishes like parmigiana and aranchini. Louisa’s bubbly personality exudes the warmth Sicily! Can’s wait for the next class! UK July 2020

When I arrived early at the fish market, they were filleting a Halibut, so they gave me the head/tail/bones. Made a wonderful/ delicious stock! I bought fillets of Halibut, Rockfish, and Pacific Cod…two types of clams (small and larger), plenty of mussels….scampi and prawns (in the picture everything has been cleaned. The “water”/broth from the shell fish was salty, yes, but extremely buttery/ rich (and I didn’t use any butter). I spooned some of it into each open shelled clam and mussel. With the garlic bread and healthy portion of Sauvignon Blanc, this was such a wonderful, comforting meal….with savory flavors of the ocean. This will become and regular with us.  US October 2020

Private ZOOM ‘Friend and Family’ Cookery Class

Friends and family scattered all over the globe? Why not try a PRIVATE ZOOM cookery class where you can all chat and laugh together whilst learning how to create a traditional Italian dish?  Of course, you may have a favourite Sicilian dish you would like to suggest – if Chef Elvira feels it can be done in a ZOOM learning format then we can do it!  If not, we can suggest similar alternatives.

Louisa and Team can accommodate a group of up to about 20. More than that and the personal flavour may be lost!
